Recipes we’ve tried!
Cooking from scratch is one of my favourite things to do. It’s better for you (depending on the recipe that is) and is cheaper too. On this page I’ll be compiling a list of triumphs and failures so you can learn from my journey.
Frittata Bites
Vegetables:
-Summer Squash
-Spinach
-Long Peppers
-Tomatoes
Did not have any of the garnishes. I doubled up the batch and ended up with 2 trays for Frittata Bites and a small square pan. Froze some bites for another day and we ate the pan and tray of bites… over the week and NOT all at once!
Deviled Eggs
I found a recipe that closely resembles how I usually make my deviled eggs. I do cheat a little though. Instead of chopping shallots or onion I just add relish. If I were to eyeball the measurement I’d say about 2-3 TBS of your favourite relish sweet or dill. The other modification would be sriracha instead of tabasco. Simple, easy and delicious!
Pasta salad
When I make something like pasta salad I go and search through a few recipes to collect my favourite ingredients, mostly the ingredients I have, and mix it all together. We have pasta, lots of eggs, onions, cheese pickles, cucumbers and ham. For the dressing I used 60% mayo 40% sour cream, a heaping spoon full of grainy mustard, a splash of apple cider vinegar, salt, pepper, garlic powder, and smoked paprika with a sprinkle of sugar. Here is my inspiration.
Dump and go, Turkey and Lentil Chili
This is a recipe I didn’t search for. I love making chili because simply I love to eat it. Like everything I cook, it’s a game of what do I have? So here is what I did:
Ingredients
1 pkg ground turkey
1 yellow onion, diced
1-2 carrot, peeled diced
2 cans diced tomatoes 1 drained 1 not
1 can maple baked beans
1 can black beans
1 can lentils
1 can sliced mushrooms
2-3 TBSP chili powder, or to taste
2 tsp garlic powder
1 tsp smoked paprika
Salt and pepper to taste + healthy squirt of sriracha
Directions:
In your instant pot on sauté mode, brown the ground turkey, add the onions and carrots and sauté until the onions are translucent. Dump in all canned ingredients and spices. Give it a good stir! My instant pot has a chili button, so I just press that. If yours doesn’t have a chili button sent to high pressure for 30 minutes, allowing a 10 minute natural release. You can enjoy this with some cheesy garlic toast like we did. So yeah, enjoy!!
Leftover Chicken Pot Casserole
Ingredients:
Left over chicken
Broth or left over broth
Carrots, diced
Onions, diced
Celery, diced
Garlic, minced
Potatoes, peeled and diced
Butter
Poultry seasoning
Salt and pepper to taste.
Biscuit recipe I followed is here.
Directions:
In a large frying pan, add your onions and your butter, sauté until onions are translucent. Add in minced garlic, sauté for only a couple minutes until it’s fragrant. Add your carrots, celery and potatoes. Once carrots are soft add in your shredded leftover chicken, season with salt, pepper and poultry seasoning. I didn’t give a measurement for poultry seasoning, because I just kind of eyeballed it so, to taste. Add the broth and cover for about 10 minutes then uncover and cook for another couple minutes. Transfer to prepared casserole dish. And don’t make the same mistake as I did, make sure the casserole dish is big enough for the biscuit topping so you don’t make a mess in your oven. Make the biscuit recipe above and top your chicken pie filling with half the biscuit recipe and the other half drop on a prepared pan and pop it in the oven as well just like as the recipe says.
For the leftover chicken pot pie casserole, bake until the biscuits are cooked through. Mine took about 45 minutes; test with a toothpick and enjoy!! We like this so much there was nothing left from a 9×9 casserole dish!
Creamy Chicken Tortilla Soup
The recipe my mom and I followed is here. It was better than the tortilla soup we had from my parents favourite Mexican restaurant when they lived in California. Yum!
The only changes we made were from necessity as everything was closed on Saturday November 11th.
Instead of Ro-Tel we used just canned diced tomatoes.
Instead of 1 small fresh jalapeño, we used pickled jalapeños I had for nachos.
After those 2 adaptations we really did follow the recipe as close as possible. Highly recommend the fried tortillas… really added to the texture of the dish. If you give this a try, please add a picture to the comments!
